White, fine-grained flesh is crisp, juicy, and subacid. Pleasant fresh, but prized above all for cider; heavy-yielding and high-quality. Vigorous trees bear young and heavily. Keeps well into winter. Long presumed variety unsuited to hard winters, but trees identified as \"Aroostook Sunset,\" an old apple growing in northern Maine, have recently DNA-tested as this variety, suggesting Smith's Cider may be considerably hardier than previously believed.
